Whole Wheat Zoo Rolls

- 1 16-ounce loaf frozen honey wheat or whole wheat bread dough
- 1 egg white
- 1 tablespoon milk
- Sesame seed (optional)
1. Thaw bread dough in the bag either overnight in the refrigerator or for 2 hours at room temperature (see package directions). 2. Using kitchen scissors, divide the thawed bread dough into 12 equal portions (each potion should make 1 zoo-shape roll). See below for directions on shaping the dough into zoo shapes. Lightly grease 2 baking sheets. 3. When all the rolls are shaped on the greased baking sheets, cover the rolls lightly with a kitchen towel. Let the rolls rise in a warm place (away from cool drafts) until they are nearly double in size (30 to 35 minutes). If your oven has 2 racks, adjust so that both racks are positioned in the middle of the oven. Preheat the oven to 350 degree F. 4. In a small bowl use a fork to stir together the egg white and milk. With a pastry brush, gently brush the tops of the dough shapes with egg white mixture. Sprinkle with sesame seed, if you like. 5. Bake in a preheated 350 degree F oven about 20 minutes or until golden on top (if your oven only has one rack, place 1 pan of rolls, covered, in the refrigerator until the other pan is done baking). Use hot pads to remove the baking sheet from the oven. With a spatula, transfer rolls to a wire rack. Let cool slightly. Makes 12 rolls. To shape rolls:Snake: Roll a portion of dough into a 10-inch-long rope. Place the rope on the greased baking sheet, curving the rope several times so it looks like a moving snake. For the mouth, cut a 3/4-inch slit in one end. Snail: Roll a portion of dough into a 10-inch-long rope. Wrap into a coil shape and place on the greased baking sheet. For the head, trim outside end of rope flat; pull it out a little from the coil. Turtle: Starting with a portion of dough, pinch off 6 little pieces of dough for the legs, head, and tail. For the body, roll remaining large piece of dough into a ball and place on the baking sheet, flattening slightly. Place legs, head, and tail on the baking sheet, touching the body where you think they should go. To make the shell design on the body, use a small knife to cut a crisscross design, 1/4-inch deep. Rabbit: Divide 1 portion of dough into 2 equal pieces. For body, shape 1 piece into a ball; place on baking sheet. Divide other piece in half, using 1 half for the head and the other for the ears and tail. Place head on baking sheet touching body. Place ears touching head and tail touching body. Bear Face: Divide 1 portion of dough into 2 equal pieces. For the head, shape 1 piece into a ball; place on baking sheet. Divide other piece into 2 ears and a nose. Place ears on baking sheet, touching bear head. Attach nose on bear head in the middle. For eyes, use a small knife to cut little slits in the dough (above the nose). Flowers: Divide 1 portion of dough into 2 equal pieces. Shape 1 piece into a 5-inch-long rope, then into a coil. Place it on baking sheet. For petals, divide remaining piece into 10 balls. Place balls in a circle around the coil.
